At Hampers with Bite we are all about adding a touch of elegance and class to your gift hampers. With our high quality branded wine and beers, your gifts are sure to stand out from the crowd. You may replace any of the wines or beers in your hamper with your choice of of the wines and beer seen below. The wines we have available are Sauvignon Blanc, Chardonnay, Cabernet Sauvignon and Shiraz. And the local Australian beer we stock is a California Lager.

SHIRAZ

The 2015 Shiraz was fermented at moderate temperatures with pump overs to achieve soft tannins. Pressing and malolactic conversion were followed by clarification and maturation on a small amount of premium quality French and American oak chips.

Palate:

Classic notes of juicy ripe berries and subtle oak. Well-structured with medium tannins and good length on the finish.

Ideal Food Matches:

Porterhouse steak, char siew pork or hard cheeses.

CABERNET SAUVIGNON

The 2016 Cabernet Sauvignon was fermented in sweeping arm Potter fermenters for ten days. Pressing and clarification on premium French oak was followed by malolatic conversion in stainless steel tanks. Matured on premium French and American oak to add complexity and structure before final blending.

Palate:

Classic notes of ripe berry, spice and a hint of dark chocolate. Well-structured with toasty oak and fine tannins.

Ideal Food Matches:

Braised lamb shanks, pasta napoli or beef lasagna

SPARKLING WINE

Early picking and gentle pressing of free run juice was followed by a cold and slow fermentation and extended lees ageing. Each year the best parcels are blended into a modified solera system of at least six past vintages. In this way, fresh new wine is blended with older, more complex flavours. A final secondary fermentation is then initiated to add sparkle to the wine and a small amount of dosage is added to bring everything into harmony.

Palate:

Fresh citrus and stone fruit with hints of brioche, balanced by a creamy mouthfeel and a lovely crisp finish.

CHARDONNAY

Due to the longer, slow ripening season in 2017, some parcels of Chardonnay grapes were harvested early for citrusy characters, and some riper patches displaying more intense stone fruit characters were harvested later in the season.

Palate:

Rich and smooth with peach and tropical flavours. A creamy mouthfeel with hints of malt and cashews.

Ideal Food Matches:

Grilled salmon, lightly spiced Thai dishes or grilled chicken.

SAUVIGNON BLANC

Cool fermentation and processing preserved the delicate aromas in the juice and throughout fermentation. Aromatic yeasts were used to bring out the best in the variety and to add complexity.

Palate:

Zingy and flavoursome with citrus, passionfruit and lychee. Complemented by a touch of minerality and a crisp, refreshing finish.

Ideal Food Matches:

Sashimi, goats cheese soufflé or grilled chicken.

BEER

This take on the California gold rush Steam Beer, a lager fermented at ale temperatures. Including the pale ale malt and Cluster hops used in the 19th century this beer boasts piny, woody and grapefruit aroma.

Palate:

The aroma is backed up by light fruity esters and a light malt body. Finishes slightly bitter but crisp and dry.
